Ok, so these aren’t your “typical” peanut butter and jelly sandwiches, but for a person that wants to experience the deliciousness and not destroy their diet these are PERFECTION! I found myself craving a peanut butter and jelly sandwich lately. We always want what we can’t have don’t we? I used to eat a peanut butter and jelly sandwich almost every day when I was younger. I would sometimes eat grape jelly, but most of the time it was homemade blackberry jelly that my grandfather had made himself. Those were the best PB&J sandwiches I’ve ever tasted….probably because they were made with love by my mom
These really took me back to that place. The taste is amazing!
So, since I can’t have bread (because it contains gluten) I used rice cakes for my “bread”. You can use any rice cakes you prefer. I like these. They are thinner than most rice cakes and have a great taste. Plus they only have 18 calories per rice cake!!
To make these PB&J Sandwiches you will need:
4 Rice cakes
1/2 cup PB2 Powder (You can buy it in my Amazon store)
2 tbsp. local honey
1 cup ripe blackberries
First, mash your ripe blackberries to make your “jelly”. That is simply all you do, don’t add sugar or honey to your blackberries. They are sweet enough on their own.
Set that aside and make your PB2 mixture.
I never use exactly the same amount of PB2 it seems in my recipes. Sometimes I accidentally add to much water or not enough. So, when you see these measurements I post for PB2 you don’t have to stick with that. Just mix the PB2, water, and honey if you prefer together until you reach the desired consistency. You can’t go wrong.
Once you have your PB2 mixture made spread it on one of your rice cakes.
Then top it with mashed blackberries.
Top with another rice cake.
Repeat the process and make another.
These little beauties really took me back in time. You won’t believe how yummy they are!
