Why yes they do taste as good as they look 🙂 I’ve been dying for a good cookie lately and these little beauties fill the void nicely.
Preheat oven to 350 degrees.
You will need:
1 cup oats
2 ripe bananas
1/2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. pumpkin spice
a dash of ginger
1 1/2 tsp chia seed
chocolate chunks for topping (I use Enjoy Life brand)
Add vanilla, spices and mix.
Mix in chia seed and let the mixture sit for 5 minutes.
Mix in oats.
Scoop out spoonfuls of mixture and flatten on baking pan. Add chocolate chunks to the top of your cookie.
Bake at 350 for 15 minutes.
Remove from oven and let cool completely.
Store in an airtight container for up to 1 week.
